San Diego Scrapbook Inn

I was lucky enough to get the opportunity to go to the San Diego Scrapbook Inn with my friend Jennifer last month. It is exactly what it sounds like. A house that we check into for 4 days and eat, sleep, and breathe scrapbooking. It's like a dream come true for a scrapper like me who loves it, but doesn't really have time day to day like I would like to. I have had a few people ask me what we do there so I thought I would post some of my favorites from the weekend.

Homemade Granola Bars

4 and 1/2 cups rolled oats

1 cup whole wheat or spelt flour

1 tsp baking soda

2 tsp vanilla

1 cup soft coconut oil

2/3-3/4 cup honey

1 cup raw shredded coconut

Optional add-ins

White Chocolate chips

Mini chocolate chips

Chopped Brazil nuts

Sunflower seeds

Chopped Almonds

Dried Fruit

Protein Powder

Preheat oven to 350

Grease 9 x 13 pan

(I use this amazing extra large non stick baking sheet that I got at Kohl's)

In a large mixing bowl combine coconut oil and honey

Add in all additional ingredients and stir thoroughly

Press mix firmly into greased pan

(I add a little honey here and there to press any dry spots together)

Bake for 15 minutes if in a 9 x 13

Bake for 8 minutes if you use a shallower pan

Let cool

Shillawna cuts hers into bars, wraps in plastic wrap and stores in fridge

I cut mine into squares and store in tupperware.

Enjoy! Be careful, you might want to eat the whole pan yourself!!

We added the window, shutters and HOME sign and I couldn't be happier with it.

Love my skinny tall tree. I got it FREE off an exchange. It is sparse and coming apart in the

middle, but I am able to cover that up with all the beautiful mesh and ribbon!

This was the scene at our church Tuesday night as we met for a spiritual decadent dessert night. I am the board leader and get the privilege to work with many talented, hard working women. Very pinterest inspired, beautiful tables that night as we listened to our speakers encourage us to become closer to Christ.
